Preparation: 1.Preheat
the oven to 375 degrees F. Grease cookie sheets.
2. In a medium bowl, cream together the brown sugar, white
sugar, margarine and shortening until light and fluffy.
Stir in Kefir and vanilla. Combine the flour, baking soda,
and salt; stir into the creamed mixture until incorporated,
then mix in chocolate chips. Drop by rounded teaspoonfuls
2 inches apart onto the prepared cookie sheets.
3. Bake for 8 to 10 minutes in the preheated oven, until
the edges begin to brown. Cool for a minute on the cookie
sheets before removing.
Santa’s
Sweet Bread
Ingredients:
3 cups all-purpose flour
1-teaspoon salt
1-teaspoon baking soda
1/2-teaspoon baking powder
1-cup sesame seeds (or 1 cup poppy seeds)
3 eggs
1-cup olive oil
1-cup sugar
2 cups Raspberry or Strawberry Lifeway Kefir
2 tablespoons fresh squeezed lemon juice
Preparation: Sift together
the flour, salt, soda, and baking powder; stir in seeds. Beat
the eggs in a large bowl. Add the oil and sugar; cream well.
Add the kefir and lemon juice. Spoon into 2 greased loaf pans.
Bake in a 325-degree F. oven for 1 hour.
Original
Green Bean Casserole
Ingredients:
2 (10-ounce) packages frozen French-style green beans
1 small onion, sliced
1 tablespoon chopped parsley
3 tablespoons butter
2 tablespoons all-purpose flour
1/2 cup skim milk
1 cup low fat plain Lifeway Kefir
1/2 cup shredded Cheddar cheese
1/4 cup fine dry breadcrumbs
Preparation: Cook green
beans according to package directions than drain. Use two
tablespoons of butter to cook onion and parsley until the
onion is tender. Mix in flour, salt and pepper. Add milk;
cook and stir until thickened. Stir in kefir and cooked beans;
heat just until mixture begins to bubble. Spoon into 5-quart
casserole; sprinkle cheese over top. Melt the remaining 1
tablespoon butter; toss with breadcrumbs and sprinkle over
beans. Broil a few inches away from heat until cheese melts
and crumbs brown, one to two minutes.
Preparation: Steam sweet
potatoes just until tender, about 6 to 10 minutes. Melt margarine
in small saucepan. Add onion, garlic, dill, paprika, salt
and pepper.
Cook until onion is tender. Remove from heat. Stir in kefir
and lemon juice. Cook over low heat until heated through,
about 1 minute. Pour sauce over potatoes and stir to coat.
Sprinkle with parsley. Serve immediately.
Creamed Spinach
Ingredients:
3 pounds fresh spinach
2 shallots, minced
2 cloves garlic, minced
4 tablespoons olive oil
2 cup plain Lifeway Kefir
Salt and freshly ground black pepper, to taste
2 tablespoons fresh mint leaves, minced
Preparation: Wash the
spinach well tearing into pieces and placing into a large
saucepan. Add shallots and garlic and cook over medium heat,
covered, for about 5 minutes stirring the vegetables occasionally.
Drain the vegetables well, then add the olive oil and continue
to cook for 3 minutes, stirring constantly. Remove from the
heat, stir in the kefir, and season with salt and pepper.
Fold in mint and serve immediately.
Traditional
Mashed Potatoes
Ingredients:
8 med. peeled baking potatoes, cut into 1 1/2" pieces
2/3 c. skim milk
1/2 c. Lifeway plain low-fat Kefir
4 tbsp. butter
1/2 tsp. salt
1/4 tsp. pepper
Preparation: Cook potatoes
in boiling water for 30 minutes or until tender; drain. Combine
potatoes, skim milk, kefir, butter, salt and pepper; beat
with electric mixer until smooth.
Bloody Tooth
Trifle
Ingredients:
1 Granny Smith Apple
2 c of Lifeway Cherry Kefir
10 tbsp. of granola or Grape Nuts cereal
Preparation: Chop the
apples into fine bits and divide among four parfait dishes.
Pour Lifeway Kefir into one glass and divide it among
the four dishes. Add two tablespoons of granola or cereal
to each dish, and then top with layers of Kefir from the remaining
glass, chopped apples, cinnamon and a sprinkle of granola
or cereal on top. Refrigerate at least 15-20 minutes before
digging into the Bloody Tooth Trifle.
Vampire's
Blood Shake
Ingredients:
2 c of Lifeway Raspberry Kefir
1/2 tsp. of vanilla extract
1 package of frozen raspberries or strawberries, thawed
Ice cubes
1 pint strawberry ice cream
Strawberry syrup
Preparation: Mix
Lifeway Kefir, vanilla, and berries in the blender. Pour
concoction into tall glasses over ice cubes, or chill. Top
with a big spoonful of strawberry ice cream and drizzle with
strawberry syrup for oozing blood.
Oozing Bloody
Dip
Ingredients:
4 oz. box instant vanilla pudding
2 c. skim or low-fat milk
1 c. Lifeway Strawberry Kefir
Strawberry syrup
Sliced apples, bananas, pears
Cubed pound cake or angle food cake
Preparation: Make the
pudding according to the directions on the box, using skim
or low-fat milk. Refrigerate for five to 10 minutes. Stir
in Lifeway Kefir just before serving and drizzle
with strawberry syrup for a cool bloody effect. Serve the
Oozing Bloody Dip with slices of apples, bananas, or pears
and pieces of pound cake or angle food cake.
Spooky Jack-o-Lantern
Smoothie
Ingredients:
1 c. fresh or canned pineapple, drained and cut into
chunks
8 large oranges with tops carefully cut out and as much
orange pulp removed and saved
Preparation: Cut a thin
slice of peel from the bottom of each orange so it will not
roll. Slice off the top 1/3 of each orange. Scoop out the
inside with a serrated knife and grapefruit spoon. Put pulp,
(no seeds), pineapple, and Lifeway Kefir into blender.
Blend mixture until smooth. Then decorate oranges like a Jack-O-Lantern
with your favorite decorations. Cut a whole in each “cap”
and insert a straw. Pour blended smoothie into decorated Jack-O-Lantern
oranges, place caps on top, and finally enjoy your Spooky
Jack-O-Lantern Smoothie creation.
Muddy Pumpkin
Pudding
Ingredients:
1 c. pumpkin pie filling
1 c. Lifeway Peach Kefir
1 c. Lifeway Vanilla Kefir
1/4 cup heavy whipping cream, whipped*
3-4 chocolate cookies, any type, crumbled
Gummy Worms Candy
Preparation: Mix pumpkin
pie filling with Lifeway Kefir peach. In glass, layer pumpkin
mixture, Lifeway Kefir vanilla, 1 tbsp cookie crumbles and
one more layer of pumpkin mixture. Top with 1 tbs. of whipped
cream and sprinkle with cookie crumbles and carefully position
gummy worms as if worms were crawling out. The last step is
taking a massive bite of this Muddy Pumpkin Pudding.
* To whip cream, chill a large bowl in refrigerator or freezer,
use mixer or whisk and whip cream till light and fluffy.
