MISH-MASH PANCAKES
A Brunch favorite!
 
Ingredients:
  • 1 egg
  • 1 c Lifeway Kefir or Lifeway SoyTreat™
  • 1 c unbleached flour
  • 1 T sugar
  • 1 t baking powder
  • 1 t baking soda
  • 1/4 t salt
  • 2 T vegetable-oil
Topping:
  • 1/2 c Lifeway Kefir or Lifeway SoyTreat™
  • 1/4 c oats or musli
  • 1/4 c raspberries
  • 1/4 c blueberries
  • 1/4 c cut strawberries
  • 1/4 c cut bananas
Preparation: Wisk together flour, sugar, baking soda, baking powder, and salt. Add egg and Lifeway Kefir or Lifeway SoyTreat (add until batter is smooth). On a very hot preheated and oiled griddle, pour 1 cup batter per pancake. Turn when bubbles appear. For each serving, add the toppings as suggested or your own fresh fruit combinations.
