Pumpkin Cheesecake
Ingredients:

Crust:

  • 1-1/2 boxes cinnamon graham crackers, crushed
  • 4 tablespoons brown sugar
  • 4 tablespoons flour
  • 1/2 cup apple juice concentrate

Filling:

  • 1-1/2 cups Lifeway Farmer’s Cheese
  • 1/4 cup low fat plain Lifeway Kefir
  • 3/4 cup sugar
  • 1 teaspoon vanilla extract
  • 6 tablespoons nonfat liquid egg substitute 
  • 1 cup pumpkin puree 
  • 1 teaspoon apple pie spice 
  • 3/4 teaspoon cinnamon
Preparation:

Preheat oven to 350 degrees F. 
Combine the crust ingredients in a food processor. Lightly spray a 10-inch springform pan with cooking spray. Evenly distribute crust batter along the bottom and up the sides of the pan. Bake for 20 minutes and leave the oven on.
Using an electric mixer beat farmer’s cheese, kefir, sugar, and vanilla extract until well blended. Add the egg substitute, and mix well. To the mixing bowl, add pumpkin and spices. Mix well with an electric mixer until the ingredients form one consistency. Pour mixture onto the crust and shake lightly to even the top. 
Bake for 1 hour, until firm. Remove from oven and place on a cooling rack. Run a knife along the sides of the pan to loosen the cake. Cool for 30 to 40 minutes in the pan and then remove the sides. Chill in the refrigerator for 2 to 3 hours before serving.

Cranberry Kefir Pie
Ingredients:
  • 1 (6-ounce) package orange gelatin 
  • 3/4 cup boiling water 
  • 2 cups Lifeway plain Kefir 
  • 2 cups cranberry sauce 
  • 2 cups non-dairy whipped topping (see note)
  • 1 (9-inch) baked pie shell 
Preparation:

In a bowl dissolve orange gelatin with 3/4 cup boiling water. Stir in kefir and cranberry sauce. Mix well. Chill for 1 hour, or until thickened, stirring occasionally. Fold in 2 cups non-dairy whipped topping then pour into a 9-inch baked pie shell. Chill for 4 hours, or until set. 

Strawberry Low-fat Kefir 
Banana Cream Pie
Ingredients:
  • 2 pts. Fresh strawberries
  • 1 c. sugar
  • 2 c. Lifeway Low-fat Plain Kefir
  • 6 oz. strawberry jello
  • 2 c. boiling water
  • 1 c. cold water
  • 5 ripe bananas
  • 2 precooked 9-inch piecrusts
  • 1 pt. whipping cream
Preparation:

In a large bowl crush strawberries. Add sugar and Lifeway Plain Kefir; stir until smooth. In a separate bowl add boiling water to jello and stir for two minutes. Add cold water and stir this concentrated jello slowly into the Kefir strawberry mixture until smooth; cool. Cover bottom of piecrusts with sliced bananas. Slice more bananas on top of the filling and refrigerate 2 hours. Top with whipped cream and serve.



Kefir Pound Cake
Ingredients:
  • 3 c. firmly packed golden brown sugar
  • 1 c. butter or margarine, soften
  • 6 eggs
  • 3 c. all-purpose flour
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. Lifeway Low-fat Plain Kefir
  • 2 tsp. vanilla
  • 1/3 c. poppy seed
Preparation:

Preheat oven to 325 degrees. Grease and flour 10-inch tube pan. Cream sugar and butter until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine flour, soda, and salt. Add alternately with Lifeway Kefir to creamed mixture, starting and ending with dry ingredients. Stir in vanilla and poppy seed. Pour into pan. Bake about 90 minutes. Let cool for 10 minutes in pan, then out of pan for 10 minutes.


Luscious Kefir Cookies
Ingredients:
  • 1/2 c. butter or margarine
  • 1/2 c. granulated sugar
  • 1/4 c. packed brown sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1/2 c. Lifeway Non-fat Raspberry Kefir 
  • 3/2 tsp. baking soda
  • 1,1/4 c. flour 
  • 2 c. powdered sugar
Preparation:

In a mixing bowl, beat butter.  Add sugar and brown sugar, beat until fluffy.  Add eggs and vanilla, and beat well.  Add 1/2 cup of Lifeway Non-Fat Raspberry Kefir.  Mix well.  Add baking soda and flour, beat well.  Drop from teaspoon onto a greased cookie sheet.  Bake at 375 degrees for 8 - 10 minutes.  Let cool, remove from cookie sheet to serve.


Baked Cinnamon Apples with Honey-Sweetened LIFEWAY Farmers Cheese
Ingredients:
  • 2 cinnamon sticks
  • 1/2 vanilla bean split
  • 2 tablespoons brown sugar
  • Pinch of nutmeg
  • 4 whole apples, (Cortland, Gala, or Macintosh) cored, tops peeled
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons maple syrup
  • 2 cups or Lifeway farmers cheese
Preparation:

The night before: In a medium pot, combine cinnamon sticks, vanilla bean, brown sugar and nutmeg with 2 cups of water; bring to a boil, reduce to low boil until mixture reduces by half
 
In an 8x8-inch-baking dish, place apples sitting upright. Pour reduction over apples, cover with foil, and bake for 45 to 50 minutes until tender when pierced with a fork. Remove from the oven and cool in liquid. Refrigerate overnight.
 
Preheat oven to 375°F. Mix reserved liquid with Lifeway farmer's cheese. Fill the cavities of the apples with mixture and serve.
